This oil is produced only with olives of the “Peranzana” variety cultivated in the San Severo area. This local variety finds its perfect cradle in the Northern Daunia lands, one of the best areas in Apulia for these cultivations. Hand-picked, the olives are crushed with the love and passion of the past using modern techniques. It has a light green color and its perfume is discrete and non-intrusive. It’s perfect for light dishes like fish, salads and sauces.
